Chicken & Avocado Quesadillas

Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

Ingredients:

  • 2 cups cooked shredded chicken breast
  • 1 ripe avocado, mashed
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 4 whole wheat tortillas
  • 1 tablespoon olive oil
  • 1/4 cup salsa
  • 2 tablespoons Greek yogurt or sour cream (for serving)
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. In a bowl, combine the shredded chicken, mashed avocado, and shredded cheese.
  2. Lay out the tortillas and spread the chicken mixture evenly on one half of each tortilla. Fold the tortillas in half.
  3. Heat olive oil in a large skillet over medium heat. Cook the quesadillas for 3-4 minutes on each side, or until golden and crispy.
  4. Slice the quesadillas into wedges and serve with salsa, Greek yogurt, and fresh cilantro.
