Spinach & Feta Stuffed Chicken Breasts

Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 lemon, sliced (for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, combine the chopped spinach, feta cheese, garlic, oregano, salt, and pepper.
  3. Carefully cut a pocket into each chicken breast, being careful not to cut all the way through.
  4. Stuff each chicken breast with the spinach and feta mixture and secure with toothpicks if needed.
  5. In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side, until golden brown.
  6. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
  7. Serve the chicken with lemon slices.
