Quinoa Salad with Chickpeas & Avocado

Ingredients: 

1 cup quinoa, rinsed

1 15oz can chickpeas, drained & rinsed

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/4 cup chopped fresh cilantro

1/4 cup diced red onion

juice of 1 lemon

2 tbsp olive oil

salt & pepper to taste

Directions: 

  • Cook quinoa according to package directions. Once cooked, set aside to cool.
  • In a large bowl, combine the cooked quinoa, chickpeas, diced avocado, cherry tomatoes, cilantro and red onions.
  • In a small bowl, whisk together the lemon juice, olive oil, salt and pepper.
  • Pour the dressing over the quinoa salad and toss until everything is evenly coated.
  • Serve immediately or refrigerate until ready to eat.
