Grilled Shrimp & Avocado Salad

Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 avocados, diced
  • 2 cups mixed greens (spinach, arugula, etc.)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped

Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions:

  1. Preheat the grill to medium heat.
  2. Toss the shrimp with olive oil, garlic, paprika, salt, and pepper. Grill the shrimp for 2-3 minutes per side, or until cooked through.
  3. In a large bowl, combine the diced avocado, mixed greens, cherry tomatoes, red onion, and cilantro.
  4. In a small bowl, whisk together the dressing ingredients.
  5. Add the grilled shrimp to the salad and drizzle with the dressing. Toss gently to combine and serve immediately.
