BBQ Chicken & Veggie Foil Packets

Cook Time: 30 minutes
Total Time: 45 minutes

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups baby potatoes, halved
  • 1 cup baby carrots
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small red onion, chopped
  • 1 cup BBQ sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the grill to medium-high heat or the oven to 400°F (200°C).
  2. In a large bowl, toss the baby potatoes, baby carrots, bell peppers, and red onion with olive oil, salt, and pepper.
  3. Cut four large pieces of aluminum foil. Place one chicken breast in the center of each piece of foil.
  4. Divide the vegetable mixture evenly among the four foil packets, placing the veggies around each chicken breast.
  5. Pour 1/4 cup of BBQ sauce over each chicken breast.
  6. Fold the foil over the chicken and vegetables, sealing the edges to create a packet.
  7. Grill or bake the foil packets for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  8. Carefully open the packets and garnish with fresh parsley before serving.
