No-Bake Peanut Butter Oat Energy Bites

Prep Time: 10 minutes
Chill Time: 20 minutes
Total Time: 30 minutes

Ingredients:

  • 1 cup old-fashioned oats
  • 1/2 cup natural peanut butter (or any nut butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup ground flaxseed
  • 1/4 cup mini chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon (optional)

Instructions:

  1. In a large bowl, combine the oats, peanut butter, honey, ground flaxseed, chocolate chips, vanilla extract, and cinnamon. Mix well until all ingredients are fully incorporated.
  2. If the mixture is too dry, add a bit more peanut butter or honey. If it's too sticky, add a bit more oats.
  3. Once the mixture is well combined, use a small cookie scoop or your hands to form the mixture into 1-inch balls.
  4. Place the energy bites on a baking sheet lined with parchment paper and chill in the refrigerator for about 20 minutes, or until firm.
  5. Once firm, transfer the energy bites to an airtight container and store them in the refrigerator for up to a week.
