Sweet Potato & Turkey Shepherd's Pie

Ingredients:

  • 1 lb ground turkey
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 cup chicken broth
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons butter or olive oil
  • 1/4 cup milk (dairy or non-dairy)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Boil the sweet potatoes in salted water until tender, about 10-12 minutes. Drain and mash with butter or olive oil, milk, salt, and pepper. Set aside.
  3. In a large skillet, cook the ground turkey over medium heat until browned. Add the onion, carrots, and garlic, and cook for another 5 minutes until softened.
  4. Stir in the tomato paste and thyme, then pour in the chicken broth. Simmer for 10 minutes until the mixture thickens slightly.
  5. Pour the turkey mixture into a baking dish and spread the mashed sweet potatoes evenly on top.
  6. Bake for 20-25 minutes until the top is golden. Garnish with fresh parsley before serving.
