Baked Salmon with Quinoa and Steamed Broccoli

Ingredients:

  • 4 salmon fillets
  • 1 cup quinoa
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Place salmon fillets on a baking sheet, drizzle with olive oil, and season with salt and pepper. Top with lemon slices.
  3. Bake for 12-15 minutes, until salmon is cooked through.
  4. Meanwhile, cook quinoa according to package instructions.
  5. Steam broccoli until tender.
  6. Serve salmon with quinoa and broccoli.
