Caprese Stuffed Portobello Mushrooms

Ingredients:

  • 4 large portobello mushrooms, stems removed and gills scraped out
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh mozzarella balls (bocconcini), halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Mushrooms: Brush the portobello mushrooms with olive oil and season with salt and pepper.
  3. Stuff Mushrooms: Place the mushrooms on a baking sheet. Fill each mushroom cap with cherry tomato halves and mozzarella balls.
  4. Bake Mushrooms: Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the cheese is melted.
  5. Add Basil and Balsamic: Remove from the oven and sprinkle with chopped basil. Drizzle with balsamic glaze.
  6. Serve: Serve immediately as a main dish or a side. Pair with a fresh green salad for a complete meal.
