Baked Apple Cinnamon Oatmeal

Cook Time: 40 minutes
Total Time: 55 minutes

Ingredients:

  • 2 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 cups milk (dairy or non-dairy)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1 large apple, peeled and diced
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped nuts (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  2. In a large bowl, combine the oats, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the milk, applesauce, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until combined. Stir in the diced apple and nuts if using.
  5. Pour the mixture into the prepared baking dish and spread it out evenly.
  6. Bake for 35-40 minutes, or until the oatmeal is set and the top is golden brown.
  7. Serve warm, or let cool and refrigerate for quick breakfasts throughout the week.
