Turkey & Sweet Potato Skillet

Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes

Ingredients:

  • 1 lb ground turkey
  • 2 large sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions:

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey, season with salt and pepper, and cook until browned and cooked through. Remove from the skillet and set aside.
  2. In the same skillet, heat the remaining olive oil. Add the sweet potatoes and cook for 10 minutes, or until they begin to soften.
  3. Add the bell peppers, onion, and garlic to the skillet. Cook for another 5-7 minutes, or until the vegetables are tender.
  4. Return the ground turkey to the skillet and add the paprika, cumin, salt, and pepper. Stir well to combine and cook for another 3-5 minutes.
  5. Garnish with fresh cilantro before serving.
