Turkey and Sweet Potato Sliders

Prep Time: 20 minutes
Cook Time: 25 minutes
Total Time: 45 minutes

Ingredients:

  • 1 lb ground turkey
  • 1 egg
  • 1/4 cup panko breadcrumbs (whole wheat if available)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 large sweet potatoes, sliced into 1/2-inch thick rounds
  • 1 tablespoon olive oil
  • 4 slices cheddar cheese (optional)
  • Lettuce and tomato (for garnish)
  • Dijon mustard or ketchup (for serving)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together the ground turkey, egg, panko breadcrumbs, Dijon mustard, garlic powder, paprika, salt, and pepper. Form into small patties.
  3. Heat a skillet over medium heat and cook the turkey patties for 4-5 minutes on each side until fully cooked. If using cheese, add a slice to each patty during the last minute of cooking to melt.
  4. Toss the sweet potato rounds in olive oil, salt, and pepper, and spread them on a baking sheet. Roast for 20-25 minutes, flipping halfway through, until tender.
  5. Assemble the sliders by placing the turkey patties between two roasted sweet potato slices. Garnish with lettuce, tomato, and your choice of mustard or ketchup.
