Grilled Chicken and Veggie Kebabs

Total Time: 35 minutes
Servings: 4

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced into rounds
  • 1 red onion, cut into chunks
  • 1 cup cherry tomatoes
  • Wooden or metal skewers

Marinade:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions:

  1. Prepare Marinade: In a small bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and pepper.
  2. Marinate Chicken and Vegetables: Place chicken, bell peppers, zucchini, red onion, and cherry tomatoes in a large bowl. Pour the marinade over the top and toss to coat evenly. Let it marinate for at least 15 minutes.
  3. Preheat Grill: Preheat your grill to medium-high heat.
  4. Assemble Kebabs: Thread the chicken and vegetables onto skewers, alternating between chicken and vegetables for a colorful presentation.
  5. Grill Kebabs: Place the skewers on the grill and cook for 5-7 minutes per side, or until the chicken is cooked through and the vegetables are tender and slightly charred.
  6. Serve: Remove from grill and serve immediately. Enjoy with a side of quinoa or a fresh garden salad.
