Almond Crusted Chicken Tenders

Cook Time: 20 minutes
Total Time: 35 minutes

Ingredients:

  • 1 lb chicken tenders
  • 1 cup almond flour
  • 1/2 cup sliced almonds, crushed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • Olive oil spray

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow bowl, mix the almond flour, crushed almonds, garlic powder, paprika, salt, and black pepper.
  3. Dip each chicken tender into the beaten eggs, then coat with the almond mixture. Press the almond coating onto the chicken to ensure it sticks.
  4. Place the coated chicken tenders on the prepared baking sheet. Lightly spray the tops with olive oil.
  5. Bake for 18-20 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.
  6. Serve with your favorite dipping sauce or a side salad.
