Turkey & White Bean Pumpkin Chili

Prep Time: 15 minutes
Cook Time: 40 minutes
Total Time: 55 minutes

Ingredients:

  • 1 lb ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) pumpkin puree
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions:

  1. In a large pot, cook the ground turkey over medium heat until browned. Add the onion and garlic, and cook until softened.
  2. Stir in the chili powder, cumin, cinnamon, salt, and pepper.
  3. Add the white beans, pumpkin puree, diced tomatoes, and chicken broth. Stir to combine.
  4. Bring the chili to a simmer, then reduce the heat and let it cook for 30 minutes, stirring occasionally.
  5. Serve the chili hot, garnished with fresh cilantro.
